Spinach Veggie Wrap

There is nothing more delicious on a warm spring or summer day than a wrap full of fresh veggies!!

 These pictures are from our Yoga Retreat with Lone Tree Yoga down in St. George, UT.  They were the perfect lunch after our beautiful hike through Zions National Park.


Spinach Veggie Wrap
(the possibilities are endless, but here's what I like in it :)

Large spinach tortillas
Hummus, any flavor
Spinach
Tomatoes
Sprouts
Avocado
Bell Peppers
Cucumbers
Red Onion
Cheese, optional
S & P, optional

Either make your own hummus or buy a flavor of your choice.  Spread a thick layer of hummus on your tortilla and fill it full of all of that vegetable goodness!  Don’t skimp on the hummus because it is your meat replacer (protein).  Believe me, you don’t  need meat.  You will be full after you eat one of these babies!!

  1. I'll try this recipe Suzy! Sounds really good and healthy. I bought a pre-packaged salmon at Costco (Morey's Wild Caught Marinated Salmon) and it is so good I had it last night and tonight too!
    Also I have a good recipe for you:
    1 apple chopped
    1 pear chopped
    1 banana sliced
    1/2 C of slivered almonds
    1/2 c Cranraisins
    Nutmeg and Cinnamon
    And if you want to splurge, add just a tiny bit of maple syrup. This is another recipe that I make over and over! Try it! You'll like it!
